Sweet n sour vegan stir-fry

  • 2 tbsp oil
  • 1 tsp garlic paste
  • 1 bag vegan meat pieces (Quorn)
  • 1 onion, sliced
  • 1 red pepper
  • 10 mange tout
  • 1 tbsp toasted sesame seeds
  • 2 bowl cooked plain rice for serving

Start by making the sauce. Place the sugar, vinegar, water and ketchup into a pan and boil till the sugar dissolves. Mix together the corn flour and water and stir in to thicken the sauce. Take off the heat. Meanwhile, heat the oil and fry together the onion and garlic paste to soften. Add in the red pepper and brown for a minute before adding in the vegan meat pieces. Cook for 4-5 minutes. Add in the prepared sweet n sour sauce, along with the mange tout and cook for a further 2 minutes. To serve, spoon the rice in bowls and cover with the sweet n sour stir-fry. Sprinkle over the sesame seeds and serve.
