Sweet and sour chicken with pineapple

Serves: 2

Ingredients

  • 2 chicken breasts, skinned and cubed
  • 1 sachet `Sweet and sour chicken` (Maggi)
  • 1 large red pepper, cut into 1 inch pieces
  • 1 large onion, thickly sliced
  • 200g pineapple cubes
  • 1 spring onion, sliced diagonally
  • 1 tbsp toasted sesame seeds (Lamb Brand)
  • You will also need noodles or rice for serving

Method

Open up the sweet and sour sachet and remove the bag and tie. Place the chicken pieces in the oven bag, along with the herb sachet, sliced onion and the red pepper pieces. Close the bag with the tie and shake gently to coat all over. Place on a baking tray and cook in the oven at 200`c, for just 30-35 minutes, turning around once during the cooking time. When ready, serve the sweet and sour chicken in deep bowls with the rice or noodles. Spoon over the pineapple cubes and finally garnish with the sliced spring onion and toasted sesame seeds.
