Stuffed aubergine slices

Ingredients

  • 2 ripe auberigines
  • 400g Maltese sausage
  • 2 tomatoes, deseeded and chopped
  • 1 chopped onion
  • 2 eggs
  • 1 tbsp chopped coriander
  • 200g breadcrumbs
  • Chopped parsley
  • Salt pepper

Method

Cut the auberigine in 1cm thick rings, hollow the inner soft flesh. Sprinkle with salt and leave aside. Mix all the remaining ingredients, and stuff the hollow auberigines. Fry the auberigine from both sides, than continue to bake in the oven for further 15 minutes.
