Broccoli pea and pistachio pesto pasta with burrata

Ingredients

1 bag long stemmed broccoli
200g frozen peas
Zest and juice ½ lemon
2 heaped tbsp. Pistachio pesto (Camel brand)
300g casarecce pasta (Lamb Brand)
2 fresh burrata
Handful fresh basil leaves
Chopped pistachios for serving

Method

Start by boiling a pan of salted water and cook the casarecce pasta till al dente. In another pan of boiling water, cook the broccoli stems and peas. To put together, spoon the pesto into a large pan and mix in 1 ladleful of the pasta water. Add in the cooked pasta, broccoli, peas, lemon juice and zest and mix together well. Throw in the basil leaves and serve in 2 large bowls with the burrata and chopped pistachios on top.
