Strawberry and oat crumble with white chocolate

Serves: 10-12

Ingredients

  • 300g plain flour (Lamb Brand)
  • ½ tsp baking powder (Lamb Brand)
  • 1 tsp vanilla essence
  • 100g oats (Quaker)
  • 200g butter
  • 100g sugar
  • Zest of a lemon
  • 3 tbsp strawberry jam
  • 1 box strawberries, hulled
  • 1 tbsp icing sugar and 2 tbsp white chocolate chips to decorate

Method

Start this recipe by greasing a 35cm long loose bottomed flan tin. Place the flour, baking powder, vanilla essence and butter into a bowl and use your finger to rub to a crumb. Stir in the sugar, oats and lemon Carefully spread the jam on top, then arrange the strawberries on top. Spoon over the remaining crumble mixture and bake in the oven at 200`c for 30 minutes. When ready, remove from the oven and sprinkle over the white chocolate chips. Allow to cool completely before serving on a serving dish and dust the top with icing sugar.
