Strawberry and avocado sushi

Ingredients

For the sushi rice

  • 300g sushi rice, rinsed in cold water 
  • 2 tbsp sugar
  • Good pinch salt
  • 400ml water
  • 225ml coconut milk (Premier)

For the filling

  • 10 fresh strawberries, halved
  • 100g frozen chopped avocado, defrosted (Asiago)
  • 5-6 fresh basil leaves, sliced
  • 100g cream cheese (Emborg)
  • Black sesame seeds to decorate

Method

Start by making the sushi rice at least 1 hour before you need to use it. Rinse the rice in water to remove the starch then soak in clean water for 30 minutes. Next, drain and place into a large pan with the coconut milk, sugar, salt and water and cook till soft and the liquids are absorbed. Place on the lid and allow to sit and cool down completely. When ready, cover a sushi matt with cling film. Place on approximately ¼ of the rice and flatten out (it helps to have a bowl of water at your side) Place a layer of cream cheese along the front side, top with halved strawberries, diced avocado  and a little sliced basil. Wrap up tightly, then unwrap and sprinkle over black sesame seeds. Place a thin layer of sliced strawberries on top and wrap up tightly again to stick. Unwrap and slice into pieces.
