Spiral zucchini with Basil and walnut pesto

Ingredients

For the pesto
1 big bunch fresh basil leaves
1 clove garlic
60g walnuts, slightly toasted
200ml extra virgin olive oil
Salt and pepper to taste

You will also need
Fresh zucchini noodles (4 zucchini)
150g feta cheese
Handful cherry tomatoes, halved
Extra fresh basil leaves and walnuts for serving

Method

Start by making the pesto by simply blitzing all the ingredients together and put aside. Regarding the zucchini noodles, you can either leave raw or blanch in boiling water for 30 seconds and drain. When ready to serve, mix together the noodles and pesto and place into a large pasta bowl. Crumble over the feta cheese and toss over the cherry tomato halves. Decorate with extra basil leaves, walnuts and a drizzle of olive oil.
