Spinach and feta filo rolls
Ingredients
- 150g spinach leaves, washed, boiled and drained
- 200g feta
- 1 large egg, beaten
- Small bunch of mixed herbs such as mint, parsley and basil
- Sea salt and black pepper
- 6 sheets of filo pastry
- 100g unsalted butter
Method
Crumble the feta cheese over the spinach and mix in an egg, chopped herbs and season. Work with 2 filo pastry sheets at a time, keeping the rest covered with a tea towel to prevent them from drying out. Brush a sheet of filo pastry with melted butter then press the second sheet on top. Brush again with melted butter. Cut in half to 2 even rectangles. Spread the filling on one end of the filo rectangle. Roll the pastry over the filling to enclose it. Tuck in both ends and roll. Brush with melted butter and bake.
