Spaghetti with fresh basil and tomato sauce

Serves: 2

Ingredients

  • 200g raw spaghetti (Di Martino)
  • 150g tomato pulp
  • 2 shallots
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 8 cherry tomatoes
  • 1 spring onion
  • 1 tbsp chopped basil

Method

Chop the garlic, shallots, spring onion and sauté in olive oil on low heat. Allow vegetables to become transparent than add also the cherry tomatoes cut in half’s. Sauté for a few more minutes on low heat than pour in the tomato pulp, simmer for a few more minutes. Cook the spaghetti al dente and than toss in the tomato sauce, simmer for a few minutes into the sauce. If sauce is too thick add some water from the pan used to boil the pasta. Season well and add the fresh basil, drizzle with olive oil and serve.
