Shakshuka with spicy chorizo and halloumi cheese

Ingredients
- 1 onion, chopped
- 2 garlic cloves, finely chopped
- 1 tbsp. olive oil
- 250g chorizo sausage, diced
- 1 bell pepper, diced
- 200g pumpkin, diced
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp coriander
- 2 tomatoes, diced
- 1 cup tomato passata
- 3 eggs
- 1 block haloumi cheese (Fior di Vita)
- You will also need fresh coriander leaves and crusty bread for serving
Method
Cook the onion and garlic in hot pan with a little oil until soft. Stir in the chorizo, pepper and the pumpkin and cook for a further 2 minutes. Next, stir in the spices, tomatoes and passata and bring to the boil. Reduce to a simmer, carefully break in the eggs and poach in the sauce for 3-4 minutes.
Meanwhile, slice the halloumi cheese and grill till brown. Serve the shakshuka topped with the grilled halloumi, coriander leaves and with hot crusty bread on the side

- bżaru kkulurit
- 200g qargħa
- 2 tadamiet
- kikkra passata tat-tadam
- kuċċarina paprika
- nofs kuċċarina kemmun
- nofs kuċċarina kosbor
- kosbor frisk
- 2 sinniet tewm
- 2 zalzett chorizo frisk
- 3 bajdiet
- blokka ġobon halloumi
Method
Sajjar il-basla u t-tewm f’taġen jaħraq bi ftit żejt sakemm jirtabu. Ħawwad iċ-chorizo, il-bżar u l-qara’ aħmar u sajjar għal 2 minuti oħra. Sussegwentement, ħawwad il-ħwawar, it-tadam u l-passata u ħallih jagħli. Naqqas in-nar u ħallih itektek. Kisser il-bajd bir-reqqa u sajru fiz-zalza (poached) għal 3-4 minuti.
Sadanittant, qatta’ l-ġobon halloumi u ixwi sakemm isir kulur kannella. Servi x-shakshuka mimlija bil-halloumi mixwi, il-weraq tal-kosbor u l-ħobż iqarmeċ jaħraq fil-ġenb.
