Seared salmon bites with an asparagus and pancetta mousse topped with caramelized apples

Serves: 2

Ingredients

  • 500g salmon fillet
  • 6 asparagus
  • 1 tbsp pancetta cubes
  • 3 tbsp ricotta
  • 1/2 onion, chopped
  • 1 clove garlic
  • 1 tsp thyme leaves
  • 1/2 apple, sliced
  • 1 tbsp sugar
  • Micro herbs to garnish

Method

Cut the Salmon in 4cm cubes and seal them on a non stick pan. Remove them from the pan and slice apple and sugar, sprinkle the thyme and sauté until golden brown. In another pan sauté on low heat the pancetta and onions until pancetta starts to shrink, slice the asparagus and add to the pan, continue stirring continuously until the asparagus is softened. Remove the mix and put it in a blender and blend slowly into a paste, remove from blender allow to cool than mix in the ricotta. Finish the salmon until medium in the oven and serve with the pate on and apples on top.
