Seared salmon and calamari salad with broad beans and avocado

Serves: 2

Ingredients

  • 2 x 200g salmon fillets
  • 2 small calamari
  • 1 tsp chopped mint
  • 2 tbsp olive oil
  • 12 broad beans
  • 1/2 avocado
  • 6 sundried tomatoes
  • Bunch baby spinach
  • 8 walnuts
  • 6 artichoke hearts
  • Greek yogurt

Method

Seal the salmon from all sides and finish under the grill, slice the calamari and grill together with the salmon. Peal the beans, dice the avocado, chop the sundried tomatoes, slice the artichokes and mix all together in a bowl. Once calamari are cooked remove from tray and in a separate bowl mix with the olive oil and mint, allow to cool until salmon is cooked than mix with the avocado mix and also add the crushed walnuts and spinach leaves. Serve the salmon on the salad with natural yogurt on it.
