Sauteed rabbit with garlic and red wine sauce
Ingredients
- 1 whole rabbit
- 4 tbsp veg oil
- 1 tbsp sweet paprika
- 1 tbsp cumin powder
- 1 tsp mixed spice
- 1 onion
- 1 carrot
- 6 cloves garlic
- 1 glass red wine
- 3 tbsp hoisin sauce
- 200g salsa with peas
- 2 large potatoes
Method
Mix the spices and oil with rabbit in a bowl, Preheat a large saute pan and brown well from the first side. Turn the rabbit on the other side and the diced carrots and onions, fry until veg is lightly brown than add chopped garlic. Allow the garlic to brown and, the red wine than salsa and simmer slowly. Once nearly cooked add hoi-sin and allow to rest before serving. Meanwhile, prepare the potato wedges. Cut the potatoes in wedges, blanche in boiling water till cooked through then toss in butter. Sprinkle with sweet paprika and serve with the rabbit.
