Salted peanut snicker balls with dark chocolate

Ingredients

For the balls
100g rolled oats
8-9 medjool dates, stone removed
120g peanut butter (Pip & Nut)
80-90g honey
40g toasted salted peanuts, chopped

To decorate
200g dark chocolate, melted (Novi)
2 tsp coconut oil
Coarse sea salt

Method

Blitz the oats in a food processor till fine, then add in the dates, peanut butter and honey and blitz to a paste. Remove from the processor and stir in the chopped peanuts. Form into balls and place into the freezer for 20 minutes to firm up. When ready, dip into the melted dark chocolate to coat and sprinkle over some coarse salt.
