- 1 packet Nori sheets
- 1 packet quinoa cooked according to packet instructions (Tipiak)
- Juice of 1 lime
- 2 spoons rice vinegar
- 1 spoon mayonnaise (Hellmanns)
- 1 salmon fillet
- 1 carrot
- 2 spring onions
- 1 cucumber
- 1 avocado
- Soy sauce for serving (Tiger tiger)
- Black sesame seeds for garnish

Prepare the salmon; remove the skin and cut into 1 cm square thick slices. Peel the carrot and cut into thin strips. Peel and slice the avocado into wedges. Slice the cucumber, remove the seeds and cut into thin long strips. Seasoned the quinoa with the lime juice, rice vinegar & enough mayo to bind the mixture.
Place a nori sheet on a flat surface covered with cling film. Spread with an even layer of the quinoa mix. Put a line of the prepared vegetables and salmon at the side of your quinoa. Lift the nori sheet with the aid of the cling film and roll like a Swiss roll, pressing tight to mould the sushi rolls. Cut into 2 cm slices and serve garnished with the black sesame seeds and a side of soy sauce
