Pork chops with sweet and sour red bell peppers

Serves: 2

Ingredients

  • 2 red bell peppers, cut julienne
  • 1 small onion chopped
  • 1 leek chopped
  • Basil Leaves
  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 5 tbsp sugar
  • 2 pork chops, bone in
  • Fresh thyme
  • 2 cloves garlic
  • Seasoning
  • Olive Oil
  • Butter

Method

In a skillet heat some olive oil and fry the onions and leeks until soft mix in the peppers and cook for 2 minutes. Add the sugar and cook until golden brown then add the balsamic vinegar and leave to reduce. Set aside and once at room temperature add the basil leaves and season well. Set on a non stick pan on high heat and add some olive. Season properly the chops on both sides and fry cook for 3-4 minutes on each side. On first turning add the thyme, garlic and butter and with a spoon baste the chop. Once cooked set aside on a plate to rest for 3 minutes. On a warm plate set the pork chop and top with peppers and drizzle with olive oil.
