Peppered mussels with anchovy infused croutons
Serves:
Ingredients
For the mussels
- 150g mussels
- 2 garlic cloves (roasted in olive oil)
- 1 tbsp crushed peppercorns
- Parsley
- 5 cherry tomatoes, halved
- 100ml fish stock
- Extra virgin olive oil
- Fresh seasoning
To garnish
- 2 slices bread (cut in cubes)
- 2 anchovy fillets
- Fresh thyme
- Extra virgin olive oil
Method
In a mixing bowl, combine all the mussel ingredients except for the fish stock. Put in a hot frying pan and cook for 2/3minutes. Add fish stock and leave on heat until mussels open up. For the garnish, combine the garnish ingredients in a mixing bowl, and then roast then on a low heat in a hot pan. Serve the mussels garnished with the anchovy croutons.
