Penne with curried prawns and spinach cream

Ingredients
- 300g penne pasta (De Cecco)
- 8 king prawns
- 1 red onion
- 50g butter
- 2 cloves garlic
- 2 tbsp mild curry (A.J.S. Imports Ltd.)
- 1 bunch baby spinach
- 1 tsp red curry paste
- 1/2 glass coconut milk
- 1/4 glass white wine
Method
Chop the onion, garlic and prawns and sauté in butter with the curry powder and paste on low heat until browned, pour in the wine and deglaze. Add the cream and simmer to reduce by half, meanwhile cook the pasta al dente and than toss it in the sauce. Finally add the baby spinach, season, toss and serve.
