New Years day salmon frittata with goats` cheese and chives

Ingredients
- 8 eggs (Eurovo bio eggs)
- Few fresh basil leaves
- 2 tbsp snipped fresh chives
- Salt and pepper
- 1 tbsp olive oil (Borges)
- 200g goats` cheese (President)
- 200g smoked salmon
- 1 red onion, sliced
- Few salad leaves to garnish
- Freshly cracked black pepper
Method
Whisk together the eggs. Chop the basil and add to the eggs along with the chives and season well with salt and pepper. Heat the oil in a large pan, pour in the eggs and cook for a few minutes on each side. Tip onto a large board. Lay over the smoked salmon, sliced onion and a few salad leaves. Sprinkle over the cracked pepper and cut into 8 pieces. Serve 2 pieces on each plate for breakfast or as a starter.
