Roasted olives with burrata and toasted ciabatta

Ingredients

For the roasted olives
250g whole Kalamata olives (Camel brand)
250g whole green olives (Camel brand)
8 cloves garlic, slightly smashed
1 lemon, cut into 6
Fresh sprigs thyme and rosemary
1 small red onion, cut into 6
200-300ml extra virgin olive oil (Borges)
Freshly ground black pepper
1 tsp chilli flakes

You will also need
2 burrata
2 ciabatta
Extra fresh herbs
1 tbsp runny honey

Method

This is a very simple recipe to prepare. Place the olives in a large oven dish and place in the lemon, garlic, fresh herb sprigs and onion. Drizzle over the oil, sprinkle over the chilli flakes and season well with black pepper. Place into the oven at 200`c and roast for 15-20 minutes or until the garlic has turned golden and the oil is bubbling. When ready, slice the ciabatta in half and toast. Cut into smaller pieces. Remove the cooked herb stalks from the olives, place in the burrata and top with runny honey and extra chilli. Place in the extra fresh herbs and serve with the toasted ciabatta on the side.
