Panettone French toast with cinnamon toffee sauce

Ingredients

  • 250ml water
  • 200ml dark brown sugar
  • 3 tbsp. fresh cream
  • ½ tsp cinnamon
  • 500g panettone
  • 6 eggs
  • 150ml fresh cream (Benna)
  • 1 tbsp. milk powder (Regilait)
  • 200ml water
  • Extra butter for frying
  • 200g mascarpone cheese
  • 200g frozen raspberries
  • 1 tsp vanilla essence

Method

Make a syrup by pouring the water and dark brown sugar in a sauce pan and simmer for approximately 10 minutes until syrup thickens. Whisk in the cream and cinnamon and put aside. Trim the crusts off the panettone and cut into 2cm thick slices. Whisk together the eggs, cream, milk powder and water in a large deep dish and dip in the panettone slices. Immediately shallow fry in a pan with the extra melted butter until nicely browned. Serve the French toast drizzled with the syrup, dot with mascarpone cheese, garnish with raspberries and icing sugar.

  • 500g panettone

  • 250ml krema friska
  • mgħarfa trab tal-ħalib
  • 200ml ilma
  • barmil ġobon mascarpone
  • 200g lampun tal-friża
  • essenza tal-vanilja
  • butir għat-tisjir

Method

Agħmel ġulepp billi tferra’ l-ilma u z-zokkor ismar skur fi skutella u ħalliha ttektek għal madwar 10 minuti sakemm il-ġulepp jeħxien. Daħħal il-krema u l-kannella u warrab. Qatta’ l-qoxra tal-panettone u aqta’ fi flieli ħoxnin ta’ 2cm. Ħawwad flimkien il-bajd, il-krema, it-trab tal-ħalib u l-ilma f’dixx fond kbir u għaddi l-flieli tal-panettone minnu. Aqli immedjatament f’taġen bil-butir imdewweb żejjed sakemm jismar sewwa. Servi t-toast Franċiż imxarrab bil-ġulepp, bi ftit ġobon mascarpone, u żejjen bil-lampun u z-zokkor fin.
