Pan fried salmon with prawns and coconut milk

Ingredients

  • 2 salmon fillets x 200g
  • 6 king prawns
  • 100ml coconut milk
  • 2 medium sized potatoes
  • 1/ glass white wine
  • 1 tbsp walnut pate
  • 1/2 tsp red curry paste
  • Knob salted butter
  • Bunch spinach leaves
  • 2 cloves garlic

Method

Pan fry the salmon presentation side first turn on other side and add the prawns. Remove salmon and finish in oven, add curry paste to the prawns and toss, add wine and reduce by half than pour in the milk and simmer on low heat. Meanwhile over cook the potatoes drain and mash well with the walnut paste and butter until smooth, season well with salt and pepper. Sauté lightly the chopped garlic and toss in the spinach. Serve the mash piped neatly with a piping bag with salmon and cream sauce on the spinach.
