Pan-fried salmon with garlic herbed butter
Serves: 2
Ingredients
For the butter
- 100g butter, softened
- 2 cloves garlic, chopped
- Fresh chopped herbs like dill, parsley, chives, basil
- Squeeze of lemon juice
You will also need
- 2 salmon fillets
- 1 tbsp olive oil (Filipo Berrio)
- Dressed salad leaves and lemon wedges for serving
Method
Start this recipe by preparing the butter. Place all the ingredients into a food processor and pulse together till smooth. Place the mixture onto cling film and roll up into a sausage then place into the fridge or freezer to harden up (leave a little of the butter mixture to fry the salmon.) Next, heat the oil and the reserved butter in a pan and pan-fry the salmon fillets on both sides to seal. Remove from the pan and place in a baking tray and cook for 10 minutes. To serve, place the salmon fillets onto 2 serving plates with the dressed salad leaves on the side. Remove the butter from the fridge, take off the cling film and cut up into slices. Serve the cold butter on top of the hot salmon and dress with lemon wedges.
