Oven baked grouper with saffron and chorizo
Ingredients
- 200g grouper fillet
- Saffron strands
- 2 slices chorizo
- 100ml white wine
- 100ml fish stock
- 20g carrots
- 1 lemon, juice only
- Olive oil
- Fresh seasoning
- 20g leeks
- 20g onions
Method
In a dish, marinate the grouper with the lemon juice and olive oil for 20 minutes. When you are ready to cook the fish, pre-heat a pan and seal the grouper on both sides for 3 minutes. Continue to cook in the oven for 20 minutes with 50ml fish stock and a dash of olive oil. For the sauce, fry the leeks, onions and carrots till golden brown before adding in the white wine and reduce by half. Add the fish stock and saffron and simmer for 15 minutes .Deep fry the chorizo and use to garnish the finished dish.
