One-bowl banana bread

Ingredients

  • 3 ripe bananas, peeled and mashed
  • 1 tsp vanilla essence
  • 1 egg
  • 3 tbsp olive oil
  • 120g light brown sugar
  • 3 tbsp honey
  • 185ml milk
  • 3 tbsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • 160g ground almonds
  • 160g plain flour
  • 160g oats flakes

Method

Grease and line a 13cm x 22cm loaf tin with non-stick paper. Place the mashed banana, egg, olive oil, brown sugar, honey and milk in a bowl and whisk together to combine. Put the whisk aside and slowly stir in all the remaining ingredients. Once the mixture has come together do not over mix. Pour into the prepare tin and bake at 180`c for approximately 1 hour-1 hour 15 minutes. Allow to cool down completely before serving.
