Nori sushi cups with salmon

Ingredients

  • 3-4 sheets nori paper, cut into 12 squares
  • 150g cooked rice
  • 700g salmon fillet, skin removed and diced
  • 2 tbsp soy sauce
  • 2 tbsp spiced chilli mayonnaise (Hellmann’s)
  • 1 tbsp chopped chives
  • 1 tsp smoked paprika
  • 1 lime, zested
  • Squeeze lime juice
  • 2 tsp black sesame seeds 
  • Extra chilli mayonnaise and chives to decorate

Method

For this recipe you will need to lightly grease a 12 hole muffin tin lightly with a little oil. Press the nori sheets into the muffin holes and spoon in the cooked rice. In a bowl, mix together the salmon, 2 tbsp chilli mayonnaise, 1 tbsp chives, 1 tsp paprika, lime zest and a squeeze of lemon juice. Spoon into the 12 cups and bake in the oven at 200°C for 5-7 minutes. Remove from the oven, add a dollop of extra mayonnaise on top and decorate with the black sesame seeds and extra chopped chives.
