Nori sushi cups with salmon
- 3-4 sheets nori paper, cut into 12 squares
- 150g cooked rice
- 700g salmon fillet, skin removed and diced
- 2 tbsp soy sauce
- 2 tbsp spiced chilli mayonnaise (Hellmann’s)
- 1 tbsp chopped chives
- 1 tsp smoked paprika
- 1 lime, zested
- Squeeze lime juice
- 2 tsp black sesame seeds
- Extra chilli mayonnaise and chives to decorate

For this recipe you will need to lightly grease a 12 hole muffin tin lightly with a little oil. Press the nori sheets into the muffin holes and spoon in the cooked rice. In a bowl, mix together the salmon, 2 tbsp chilli mayonnaise, 1 tbsp chives, 1 tsp paprika, lime zest and a squeeze of lemon juice. Spoon into the 12 cups and bake in the oven at 200°C for 5-7 minutes. Remove from the oven, add a dollop of extra mayonnaise on top and decorate with the black sesame seeds and extra chopped chives.
