Mushroom rosotto with port wine

Serves:

Ingredients

  • 100g Arborio rice
  • 100g mushrooms
  • 1 onion
  • Garlic
  • Salt and pepper
  • 100ml port wine
  • 300ml vegetable stock
  • 50ml cream

Method

Preheat a pan and shallow fry the onion, garlic and mushrooms. Add the rice and stir fry for 2 minutes, gradually add the port wine and continue cooking for 1 minute. Pour in the vegetable stock, a little at a time until the rice is cooked. Stir in the cream and serve.
