Mousakka
Ingredients
- 2 large auberigine
- 400g lamb mice
- 1large onion finely chopped
- 1tsp garlic
- 2 tsp ground cumin
- 200ml polpa
- 3 eggs
- 5 fresh sliced tomatoes
- 200g grated gbejna
- 100gr grated Parmesan
- 100gr breadcrumbs
- 100ml double cream
- Salt and pepper
Method
Slice the auberigine and tomatoes, grill them and set aside. Fry the onion, garlic and cumin on high heat, add the lamb mice and the polpa, leave it to simmer and season to taste. Set aside to cool off, add one raw egg and mix. Start layering an ovenproof dish, first with the auberigine, than the lamb mix, followed by the fresh tomatoes, gbejna and another layer of auberigine. Mix the cream with the two eggs and Parmesan, spread over the top and finish with breadcrumbs. Bake for 35 minutes in a hot oven at 200`c.
