Mini mince pies

Ingredients

  • 200g good quality mincemeat
  • 25g dried cranberries, chopped
  • Zest of 2 oranges
  • 1 tbsp brandy
  • Flour, to dust
  • 250g puff pastry sheets
  • 1 packet filo pastry
  • 50g melted butter
  • 1 egg, beaten
  • 50g flaked almonds
  • Icing sugar for dusting

Method

Start this recipe by preparing the file pastry cups. Grease 2mini-muffin trays with butter. Place a sheet of file pastry over each tray, pressing into the muffin holes. Grease the file with butter and then cover with another sheet of file pastry. Press the file pastry into the holes again and cut the pastry between each muffin cavity to separate. Brush the file pastry all over again with the remaining butter. These are Prepare the filling by mixing together the mincemeat, cranberries, orange zest and alcohol. Place the puff pastry sheets onto your work top and spread the filling all over with a palette knife. Roll the puff up the pastry sheets like a Swiss roll, and cut into slices, 1 cm thick. Place a piece into the prepared file pastry cups and brush them with the beaten egg. Sprinkle over the flaked almonds and bake in a hot oven at 200`c for about 15-20 minutes, or until golden brown. Serve the mini mince pies dusted with icing sugar.

  • mgħarfa brandy; dqiq, biex tferrex
  • 250g għaġina sfiljurata; pakkett filo pastry
  • 50g butir imdewweb; bajda mħabbta
  • 50g lewż imfarrak
  • zokkor tal-ġelu għall-wiċċ

Method

Lesti l-bażi tal-għaġina. Idlek bil-butir żewġ tilari tal-forom tal-pasti. Poġġi folja għaġina fuq kull tilar u agħfasha ’l isfel fil-forom. Idlikha bil-butir u mbagħad għattiha b’folja oħra. Erġa agħfas din it-tieni folja ’l isfel. Aqta’ l-għaġina ta’ bejn forma u oħra biex tifred. Erġa’ idlek l-għaġina bil-butir. Wara lesti t-taħlita tal-mili billi tħallat flimkien il-mincemeat, il-cranberries, il-qoxra maħkuka tal-larinġa u l-brandy. Poġġi l-għaġina sfiljurata fuq il-bank u fuqha ferrex il-mili b’paletta. Rambal l-għaġina bħal Swiss roll, u qattgħu f’biċċiet ta’ 1ċm ħxuna. Poġġi biċċa għaġina mimlija f’kull bażi tal-għaġina filo li tkun ippreparajt u idlikhom bil-bajda mħabbta. Ferrex il-lewż imfarrak fil-wiċċ u aħmi f’forn f’temperatura ta’ 200oC, għal madwar 15-20 minuta, jew sakemm jiħmaru. Ferrex ftit zokkor tal-ġelu fil-wiċċ qabel isservi.
