Minestrone soup with Brie, bacon and cranberry sandwiches

Ingredients
For the soup:
- 1 small onion, chopped
- 1 clove garlic, chopped
- 1 tbsp olive oil
- Salt and pepper
- 1 small carrot, celery stick, zucchini, potato diced
- 1tsp mixed Italian herbs
- 1 stick rosemary
- 200ml polpa
- 300-400ml vegetable or chicken stock
- 1 parmesan rind
- 1 tbsp chopped fresh parsley
For the sandwich
- Few slices Brie cheese (Emborg)
- 3 slices crispy grilled bacon
- 1 tbsp cranberry sauce (Colman’s)
- 2 slices bread
- Butter for spreading

Method
For the soup, saute together the diced carrot, zucchini, celery, potato, garlic and onion with the oil for 3 minutes. Season with salt and pepper, add in the Italian herbs and rosemary and pour in the polpa and stock. Bring to the boil, and in the parmesan rind and cook down for 10-12 minutes. For the sandwich, butter the bread and fill with the sliced Brie, grilled bacon and spread over the cranberry sauce. Cover, trim off the edges and cut into 4. Serve with the minestrone soup and some crisps or potato wedges.
