Mexican style spiced chicken and tortilla salad

Ingredients
For the chicken
- 1 large chicken breast, sliced in half
- 2 tsp smoked paprika
- ½ tsp chilli powder
- 1 tsp cumin
- ½ tsp oregano
- ½ tsp onion powder
- ½ tsp garlic powder
- 2 tbsp breadcrumbs (Tipiak)
- 1-2 tbsp olive oil
You will also need

- 1 soft flour tortilla wrap
- 1 tbsp olive oil
- ½ tsp smoked paprika
- 4 tbsp chipotle sauce (Kuhne)
- Juice 1 lime
- 1 avocado, peeled and diced
- 200g tin kidney beans, drained
- 200g tin sweetcorn
- 1 red pepper, deseeded and roasted
- 2 tomatoes, deseeded and diced
- 1 small red onion, sliced
- 1 tbsp torn fresh coriander leaves
- Large lettuce leaves
- Lime wedges for serving

Method
Rub the chicken breast in the oil. Mix the spices with the breadcrumbs and use to coat the chicken on both sides. Heat a little oil in a pan and fry the chicken on both sides till cooked through. Meanwhile, cut the tortilla into triangles, drizzle with oil and sprinkle with smoked paprika and salt. Bake in the oven for 4-5 minutes until crispy. To make the salad, mix together all the remaining ingredients except the lime wedges and lettuce leaves. To serve, place the lettuce leaves around the edge of 2 deep salad bowls. Spoon in the salad and stick in the crispy tortilla triangles. Slice the breaded chicken and serve on top with the lime wedges on the side.
