Spiced breaded chicken tacos with sweet chilli mayo and sesame peanut salad

Ingredients

For the chicken

  • 1 large chicken breast, cut into slices
  • 1 packet fajita spice mix (Santa Maria)
  • 2 tbsp breadcrumbs (Tipiak)
  • 1-2 tbsp olive oil

For the salad

  • 1 carrot, cut into thin matchsticks
  • 2inch piece cucumber, cut into matchsticks
  • 1 tbsp chopped coriander
  • 2 tbsp salted roasted peanuts, roughly chopped
  • 1 tsp sesame oil (Tiger tiger)
  • 1 tsp white vinegar
  • 1 tsp honey
  • 1 tbsp orange juice
  • 1 tbsp toasted sesame seeds
  • You will also need
  • 2 tbsp sweet chilli sauce
  • 2 tbsp mayonnaise (Hellmann’s)
  • 1 box tacos (Santa Maria)

Method

Start by mixing together the fajita spice mix and the breadcrumbs. Season the chicken pieces with salt and pepper, drizzle the oil over and mix into the breadcrumb mixture to coat all over. Place onto a baking tray and cook at 200°C for 10 minutes. Meanwhile, make the salad by mixing all the ingredients together, season with salt and pepper and chill. Mix together the sweet chilli and mayonnaise. To put together, warm up the tacos in the oven for a few minutes. Fill with the peanut salad, slice up the chicken and stuff in and finish off with a good drizzle of the chilli mayo on top. Serve immediately.
