Rum & raisin banana cake

Ingredients

  • 120g Raisins
  • 100ml rum
  • 6 over ripe bananas
  • 110g butter (ICBINB)
  • 105g soft brown sugar (Lamb brand)
  • 2 egg (Le Naturelle)
  • 1 spoon vanilla extract
  • 1 ½  teaspoon cinnamon
  • ½  teaspoon grd nutmeg
  • ½ teaspoon mixed spice
  • 1 ½  teaspoon baking powder (Lamb brand)
  • ½  teaspoon salt
  • 220g  flour (Lamb brand)

Method

Soak the raisins in the rum, leave at room temperature, preferably overnight.

Grease a loaf tin with non-stick spray or extra butter.

Drain the raisins through a strainer, reserve the alcohol.

In a large mixing bowl, mash the bananas with a fork or potato masher and stir in the melted butter. Mix in the spices and 2 spoons of the remaining rum.

Mix the salt, baking powder and flour and mix into the banana batter, fold in the raisins.

Bake at 175°C for approx. 50 minutes.
