Crispy smoky chicken fingers with bbq sauce

Ingredients
2 Skinless chicken breasts (Spa)
Salt and pepper
2 packets Smoky BBQ flavoured galletti, crumbled (Crackeys)
1 heaped tbsp. Smoked paprika
2 Eggs, beaten (Coccodi)
3-4 tbsp Seasoned flour (Lamb brand)
Vegetable oil for frying (Borges)
Roasted garlic BBQ sauce for serving (Santa maria)
Small side salad for serving
Method
Start by placing 2 eggs into a bowl and beat. In another bowl place the seasoned flour and paprika and in a third bowl place the crumbled BBQ galletti. Cut the chicken into thin strips lengthways. Season well with salt and pepper. Dip into the flour, beaten egg and finally the galletti. Heat the vegetable oil in a saucepan and quickly fry the coated chicken strips for 1 minute to start to crispen. Place onto a baking tray and continue to cook in the oven for 5-7 minutes. Serve the crispy chicken fingers with a side of garlic BBQ sauce and a small salad.
