Marrow and ricotta rolls

Ingredients

  • 2 medium sized marrows
  • Fresh Thyme
  • 200g fresh ricotta
  • 50g pine nuts, roasted
  • 2 tbsp honey
  • Cherry tomatoes (optional)

Method

With a peeler make long strips of marrows. Grill and set aside. Mix ricotta, pine nuts, fresh thyme and honey. Put some mix on each marrow strip and roll. Serve sprinkled with some olive oil and seasoning. You may also serve with them some slow roasted cherry tomatoes.
