Marinated chicken wings with beer battered onion rings
Ingredients
For the wings
- 12 chicken wings
- 1 bottle ale (Blue Label ale)
- 1 tsp honey
- 2 tsp peanut butter
- 2 tsp red curry paste
- 3 tbsp Worchestershire sauce
- 1 lime
For the onion rings
- ½ cup flour (Lamb Brand)
- ½ bottle lager (Cisk lager)
- 1 tbs cornflour
- 1 red onion, sliced
- Oil for frying
Method
Pour the ale, peanut butter, curry paste, honey, worchester sauce, lime jiuce and lime zest in a pan and simmer for 20 minutes. Remove from heat and toss in the chicken wings. Place in an oven tray and roast at 180`c for 20-25 minutes. Meanwhile, prepare the batter. Mix the flour, cornflour, seasoning and lager together in a bowl making sure to remove all the lumps. Dip in the sliced onion and deep fry in hot oil. Serve the crispy chicken wings with the thick, battered onion rings.
