Lemon mousse cups with white chocolate and berries

Ingredients

For the lemon mousse

  • 500g Greek yogurt
  • 200g lemon curd (Arkadia/Waitrose)
  • Finely grated zest of a lemon

You will also need

  • 250g frozen berries, defrosted
  • 2 tbsp caster sugar
  • 4 x 5cm vanilla sponge rounds
  • 2 tots lemoncello liqueur
  • 80g white chocolate, chopped (Arkadia/Waitrose)
  • 4 Martini glasses
  • 2 tbsp lemon curd (Arkadia/Waitrose)
  • 8 Highland all butter shortbread fingers (Arkadia/Waitrose)
  • Chocolate decorations and lemon zest to serve

Method

This recipe is a very quick and easy dessert to prepare. Start by cooking together the defrosted berries and sugar in a pan for just a few minutes. Put aside and allow to cool down completely. Next, mix together the Greek yogurt, lemon curd and lemon zest in a bowl. You are now ready to put this dessert together. Place a tablespoonful of the cooled berries into the bottom of each glass. Next, spoon over some of the lemon filling, followed by a tablespoon of chopped white chocolate. Cover each with a vanilla sponge round and soak the sponge with the lemoncello liqueur. Repeat this process again with the remaining berries and lemon filling. Smooth out the top completely and place into the fridge for at least 30 minutes. To serve, glaze the tops of each glass with the remaining lemon curd and decorate each glass with 2 all butter shortbread finger and lemon zest.
