Lemon and blueberry overnight oats

Ingredients

  • 150g frozen blueberries, defrosted (Asiago)
  • Zest ½ lemon 
  • 1 tbsp sugar
  • 240ml almond milk 
  • 150g Greek yogurt
  • 90g rolled oats (Loaded Pantry)
  • Zest 1/2 lemon

Method

Start this recipe by making the blueberry jam. Place the blueberries, zest ½ lemon and 1 tbsp sugar into a sauce pan and cook together for 8-10 minutes. Remove off the heat. Meanwhile, mix together the almond milk, Greek yogurt, zest of ½ lemon and rolled oats. Roughly mix in the blueberry jam and spoon into jars or glasses. Place into the fridge and soak overnight. Serve with extra blueberries and lemon zest on top.
