Hot baked self-saucing chocolate fudge pudding

Ingredients

  • 125g plain flour (Lamb brand)
  • 100g light brown sugar (Lamb brand)
  • 1 tbsp. instant coffee
  • 25g dark cocoa powder
  • 2 tsp baking powder (Lamb brand)
  • Good pinch salt
  • 120ml milk
  • 75g butter, melted
  • 1 egg
  • 2 tsp vanilla extract

You will also need for the topping

  • 200g light brown sugar (Lamb brand)
  • 25g dark cocoa powder
  • 300ml hot water
  • 1 small tub vanilla ice-cream for serving.

Method

Preheat the oven to 200°C and grease a 9 x 9inch baking pan with butter and put aside. In a large, place the flour, sugar, coffee, cocoa powder, baking powder, salt and mix together. Mix together the milk, melted butter and vanilla and pour into the flour mixture. Pour the mixture into the prepared tin. Next, make the topping my mixing together the extra 200g sugar and 25g cocoa powder and sprinkle evenly over the batter. Next, carefully pour over the hot water but DO NOT MIX. Place the pudding into the heated oven and cook for 35-40 minutes or until the center is almost set. Remove from the oven and allow to sit for 10-15 minutes before serving with vanilla ice-cream.

  • barmil żgħir ġelat tal-vanilja

Method

Saħħan il-forn għal temperatura ta’ 200°C u idlek landa tal-ħami ta’ 9 x 9 pulzieri bil-butir u warrab. Ġo skutella kbira, poġġi d-dqiq, iz-zokkor, il-kafè, it-trab tal-kawkaw, it-trab tal-ħami, il-melħ u ħawwad flimkien. Ħawwad flimkien il-ħalib, il-butir imdewweb u l-vanilja u ferra’ fit-taħlita tad-dqiq. Ferra’ t-taħlita fil-landa ppreparata. Sussegwentement, agħmel it-topping billi tħallat flimkien 200g zokkor żejjed u 25g trab tal-kawkaw u roxx b’mod uniformi fuq it-taħlita. Sussegwentement, ferra’ bir-reqqa fuq l-ilma sħun imma tħallatx. Poġġi l-pudina fil-forn imsaħħan u sajjar għal 35-40 minuta jew sakemm iċ-ċentru jkun kważi qagħad.
