Honey chilly chicken on forest fruit risotto

Ingredients

  • 1 small whole chicken breast aprox 450-500g
  • Red currypaste ½ tsp
  • 1 tbsp Honey
  • 1 tbsp Smokey paprika
  • 200g Guanciale
  • 1 small onion diced 
  • 3 cloves garlic chopped
  • 100g forest fruits (Asiago)
  • 100g arbrio rice
  • 1/2 glass white wine 
  • 200ml chicken stock 200ml
  • 100ml cream uht 
  • 1 tbsp fresh thyme
  • 1 jar beef jus (Mise En Place)

Method

In a bowl mix well the paprika, honey and red curry paste and brush the chicken with.

Seal in a saute pan from all sides and finish in a preheated oven at 190 degrees for 25 minutes.

Cut guanciale in cubes and saute with little butter together with the onions and garlic, add the berries and stir well.

Add the rice and stir then pour in the wine stock and simmer until rice is cooked through.

Finally add the cream thyme and serve underneath the chicken.
