Halloween pumpkin cupcakes
Serves: 12
Ingredients
- 220g plain flour (Lamb Brand)
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 100g dark brown sugar
- 2 large eggs
- 225g cooked pumpkin and pureed
- 120ml vegetable oil
- 80ml milk
- 1 tsp vanilla extract
Method
Preheat oven to 180`c and line your muffins tray with cupcake liners. Set aside. In a large bowl, toss the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves together until combined. Set aside. In a medium bowl, whisk the brown sugar and eggs together until combined. Add the pumpkin, oil, milk, and vanilla until combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not over mix the batter. Bake for 17-20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely before decorating with frosting and sugar paste.
