Halloumi fries and beer battered onion rings with sun-dried tomato and pesto mayo

Ingredients
For the halloumi
- 2 blocks halloumi cheese, cut into thick fingers
- 3 tbsp flour
- Good pinch salt
- 1 tsp mixed herbs
- ½ tsp dried chilli flakes
For the onion rings
- 2 large onion, cut into thick slices
- 2 tbsp corn flour
- 120g flour
- 1 egg
- Good pinch cayenne pepper
- 1 tsp salt
- ½ bottle beer
You will also need
- 4 tbsp mayonnaise (Tesco)
- 2 tbsp minced sundried tomato (Tesco)
- 2 tbsp green pesto (Camel Brand)
- Cooking oil for frying
Method
For the onion rings, mix together the corn flour, flour, cayenne pepper and salt. Add in the egg and enough of the beer to make a nice smooth thick batter. Dip in the onion rings, coat and dip into hot oil, cooking until golden brown. For the halloumi fries, mix together the flour, herbs, chilli and salt. Carefully coat the halloumi fries in this mixture and fry in hot oil for just a few seconds till golden brown. Make the dips by mixing together half of the mayo with the pesto and the other half with the sundries tomato paste and serve with the cooked halloumi fries and onion rings.
