Grilled sausage summer salad with apples, pecan nuts and soft gorgonzola
Ingredients
For the salad
- 1 tsp olive oil (PREGO)
- 6 herbed sausages (PREMIUM BRITISH SAUSAGES)
- Mixed salad leaves
- 1 red onion, sliced
- 1 granny Smith apple, cored and sliced
- 50g pecan nuts, slightly toasted
- 150g soft gorgonzola, cut into cubes (GALBANI)
For the dressing
- 1 tsp Dijon mustard (COLMANS)
- 4 tbsp olive oil
- 2 tbsp white wine vinegar
- Juice of a lemon
- 1 tbsp honey
- Fresh seasoning
Method
This is an extremely easy salad to prepare. Start by grilling the herbed sausages. Brush them lightly with the teaspoon of olive oil and cook them under a grill or in a griddle pan until brown and cooked through. Meanwhile, prepare the salad dressing by whisking all the ingredients together in a small bowl and season well with salt and pepper. Place the mixed salad leaves into a large bowl and toss in the sliced onion, sliced apple, pecan nuts and gorgonzola cheese. Pour in the prepared salad dressing and mix together well. Divide the mixture into 2 large serving plates. Place the warm grilled sausages on a chopping board and slice each sausage diagonally into 5 pieces. Place the sausage slices on top of the salads and serve whilst still hot.
