Grilled pizza with smoked chicken

Ingredients

  • 500g flour
  • 1 tbsp. sugar
  • 1 tbsp. salt
  • 2 tbsp. olive oil
  • 12g yeast
  • 300ml warm water
  • 1 chicken breast
  • 1 tsp sesame oil
  • 1 cup rice
  • 2 tbsp. soft brown sugar
  • 10 tea bags
  • 2 star anise
  • 1 cinnamon stick
  • 2-3 tbsp. pesto (Camel brand)
  • 4 tbsp. shredded mozzarella
  • You will also need rocket, and tomato slices for serving

Method

Prepare a pizza dough with the flour, sugar, yeast, salt, olive oil and warm water. Cover and allow proving. Cut into 150 g balls and flatten slightly, cover with a cloth and rest for 10 minutes. Cook the pizzas on a flat griddle pan with a little olive oil on both sides for 3-4 minutes. Trim the chicken breast, brush with sesame oil and season with salt and pepper. Seal the chicken breast in a hot pan and continue to cook for 5-6 minutes. Prepare the smoking mix, open the tea bags and place the leaves in bowl together with the brown sugar, star anise, cinnamon stick and rice. Take a deep pan, cover with several sheets of aluminum foil and place the smoking mixture on top, cover with a lid and put on low heat until mixture starts smoking. Put a cake rack on the smoking mix and place the breasts on top, cover with lid and allow cooking. To serve, brush the pizza with the pesto and sprinkle with the mozzarella place under a grill for a few seconds until melted. Top up with the tomato slices and rocket leaves. Slice the chicken breast and place on top of the pizzas with rocket leaves

Method

Ipprepara l-għaġina tal-pizza bid-dqiq, iz-zokkor, il-ħmira, il-melħ, iż-żejt taż-żebbuġa u l-ilma sħun. Għatti u ħalliha toqgħod. Aqta’ fi blalen ta’ 150g u ċċattja ftit, għatti b’ċarruta u ħallihom jistrieħu għal 10 minuti. Sajjar il-pizez fuq pjanċa tal-gradilja ċatta bi ftit żejt taż-żebbuġa miż-żewġ naħat għal 3-4 minuti. Naddaf is-sider tat-tiġieġ, dellek biż-żejt tal-ġulġlien u ħawwar bil-melħ u l-bżar. Issiġilla s-sider tat-tiġieġ f’taġen jaħraq u kompli sajjar għal 5-6 minuti. Ipprepara t-taħlita smoking billi tiftaħ il-boroż tat-te u tpoġġi l-weraq fl-iskutella flimkien maz-zokkor ismar, il-ħlewwa stellata, iz-zokk tal-kannella u r-ross. Ħu dixx fond, għatti b’diversi folji ta’ fojl tal-aluminju u poġġi t-taħlita smoking fuqha, għatti b’għatu u poġġi fuq nar baxx sakemm it-taħlita tibda ddaħħan.
