Grilled halloumi cheese and vegetables with minted yougurt

Ingredients

  • 1 large red and yellow pepper
  • 1 aubergine
  • 1 block halloumi cheese (250g)
  • ½ cucumber, peeled
  • 1 tbsp olive oil
  • Fresh seasoning
  • Mint leaves for serving

Method

Start by preparing your vegetables. De-seed the peppers and cut into quarters. Slice the aubergine, halloumi cheese and cucumber into thick slices horizontally. Season well with salt and pepper. Heat a griddle pan, drizzle with the oil and cook the sliced peppers, aubergine and halloumi cheese till golden brown. Prepare the dressing by mixing together all the ingredients. Once the vegetables and cheese are browned, start plating the dish. Put a piece of yellow pepper on your serving plate and drizzle over some of the dressing. Place a piece of Halloumi cheese on top, and then a piece of aubergine, and drizzle again with the dressing. Next, put a layer of raw cucumber on, and then a piece of red pepper. Drizzle the stack with some more dressing before placing a second piece of halloumi cheese on top. Drizzle the remaining dressing around the halloumi and vegetable stack, and decorate the plate with some fresh mint leaves.

  • 4 mgħaref jogurt Grieg
  • 2 mgħaref nagħniegħ imqatta’
  • 2 sinniet tewm imqattgħa
  • 1 mgħarfa meraq tal-lumi

Method

Ibda billi tipprepara l-ħaxix. Neħħi ż-żerriegħa tal-bżar ikkulurit u qattagħhom f’erba’ biċċiet. Qatta’ l-brunġiela, il-ġobon u l-ħjara mit-tul, f’biċċiet ħoxnin. Ħawwarhom sew bil-bżar u l-melħ. Saħħan grilja, itfa’ ftit żejt fuqha u sajjar il-biċċiet tal-bżar, il-brunġiela u l-ġobon sakemm jiskuraw fil-kulur. Ipprepara t-taħlita tal-wiċċ billi tħallat l-ingredjenti kollha flimkien. Meta l-ħaxix u l-ġobon ikunu ħmaru, ibda lesti l-platt. Poġġi biċċa bżaru isfar fil-platt u itfa’ ftit mit-taħlita fuqha. Poġġi biċċa ġobon fuqha u biċċa brunġiela u erġa’ itfa’ ftit mit-taħlita. Imbagħad poġġi biċċa ħjara nejja u biċċa bżaru aħmar. Itfa’ ftit ieħor mit-taħlita u poġġi t-tieni biċċa ġobon fil-wiċċ. Ferrex it-taħlita li jkun fadallek madwar it-torri li tkun bnejt bil-ħaxix u l-ġobon u żejjen bi ftit weraq tan-nagħniegħ fuq kollox.
