Goats` cheese, sundried tomato and couscous muffins

Serves:

Ingredients

  • 250g couscous with spices (Tipiak)
  • 1 tbsp chopped mint
  • 230g plain flour (Lamb Brand)
  • 2 tsp baking powder
  • Fresh seasoning
  • 5 eggs, beaten
  • 3 tbsp olive oil
  • 250ml milk
  • 5mixed seeds, sesame, sunflower , poppy seeds (Lamb Brand)
  • 150g soft goats cheese, crumbled
  • 6 sun-dried tomatoes, chopped
  • Fresh rucola or salad leaves for serving

 

Method

Start this recipe by heating the oven to 200`c and greasing a 12 hole muffin tray with olive oil. Place the couscous, mint, flour, baking powder in a bowl. Season well with salt and pepper, mix together well and put aside. In another bowl, mix together the eggs, olive oil and milk. Add this mixture to the flour mixture and mix together. Immediately stir in the mixed seeds, goats` cheese and sun-dried tomatoes. Divide the mixture between the muffin holes, making sure not to overfill as they with spill. Bake for 15-20 minutes until they have risen and browned. Remove from the oven and serve with some mixed salad leaves either hot or cold.
