Gluten-free salted pistachio, chocolate and date truffles

Ingredients
- 9 medjool dates, stones removed
- 100g gluten-free cioko sticks (Schar)
- 70g roasted pistachios (Lamb brand)
- 1 tsp vanilla extract
- 2 bars Gluten-free white chocolate (Lamb brand)
- 1 tsp coarse sea salt
- Extra chopped roasted pistachios and rose petals to decorate

Method
This is a very simple recipe. Just place the chocolate fingers and the pistachios together to break. Add in the vanilla and medjool dates and pulse to a paste. Form into small balls and freeze for 30 minutes before dipping and coating in the white chocolate. Whilst still wet, decorate the top with crushed pistachios and rose petals and coarse sea salt before allowing to set.
