Gluten-free gnocchi with pistachio pesto and burrata

Ingredients

1 handful fresh basil leaves
1 clove garlic
25g grated parmesan cheese (Zanetti)
75g pistachios
100ml olive oil
Salt and pepper to taste

You will also need

1 burrata (Zanetti)
1 packet gluten-free gnocchi (Schar)
Few rocket leaves or micro greens to decorate
1 tbsp chopped pistachios

Method

Start this recipe by blitzing all of the pesto ingredients together and put aside. Next, cook the gnocchi in a pan full of boiling salted water until cooked and mix with a little of the pan water and 2 heaped tbsp. of the pesto. Serve into 2 bowls with half a burrata on top of each and decorate with fresh greens and chopped pistachios.
