Garlic and herb infused grouper on a lime and white bait fritters

Serves: 2

Ingredients

  • 2 x 150g grouper or perch fillets
  • 2 garlic and herbs sheets (Maggi so tender)
  • 200g white bait
  • 50g flour
  • 1 egg
  • 1/2 tsp lime zest
  • 1/2 tsp chopped parsley
  • 2 king prawns
  • 1 knob butter
  • 4 cloves garlic
  • 1/2 glass white wine
  • 50ml fresh cream (Benna)
  • 6 asparagus stems
  • Bunch spinach
  • 2 tbsp garlic oil

Method

On a sauté pan grill the fish wrapped in the sheet until well browned and finish in oven if not completely cooked. Sauté on low heat the prawns and chopped garlic in butter until butter in browned, pour in the wine and reduce by half than cream and simmer to thicken. In a bowl mix well the white bait, flour, egg, zest and parsley, form the fritters and shallow fry until well browned from both sides. Blanch the asparagus and toss with the spinach in garlic oil.
