Fruit and nut chicken salad

Ingredients
- 400g chicken thighs (Dewfresh)
- 1 tbsp Cajun spice
- 1 peach, cut into wedges
- 150g geek yogurt
- 1 tbsp honey
- 60g diced frozen mango
- 60g diced frozen avocado
- 1 soft goat cheeselet
- 50g crushed walnuts
- Small bunch baby spinach leaves
- ½ cucumber, deseeded and diced
- 4 slices bacon, diced and fried
Method
Start this recipe by defrosting the mango and avocado. Drizzle a little olive oil over the chicken and rub in the Cajun spice. Preheat a griddle pan and grill the bacon till crispy. Remove from the pan and add in the chicken and peaches and cook through. Mix the yoghurt and honey together well in a large bowl and add in the cucumber, crushed walnuts, crumble in the cheeselet and mix in the defrosted mango and avocado. Carefully toss in the baby spinach, fried bacon pieces and grilled peach wedges. Serve the salad into 2 bowls with the grilled chicken thighs on top.

Itfa’ bir-reqqa l-ispinaċi, biċċiet tal-bejken moqli u l-ħawħ mixwi. Servi l-insalata f’żewġ skutelli bil-koxox tat-tiġieġ mixwi fil-wiċċ.
